If you are looking for a cheesecake that is dairy-free, nutrient dense, and absolutely delicious, you have come to the right place ๐
Ingredients
- 1 1/2 cups of almonds
- 1/2 tsp of sea salt
- 3 cups of cashews (soak for 2 to 4 hours, helps to eliminate the enzyme inhibitors)
- Enzymes help speed up the digestion of food
- 1/2 cup of maple syrup
- 1 1/3 cups of pureed pumpkin
- 6 tbs canned coconut cream
- 3 tbs of lemon juice
- 1 tsp of vanilla extract
- 1 tsp of cinnamon
- 1 tsp of ground ginger
- 1/2 tsp of ground nutmeg
- 1/4 tsp of sea salt
Directions
- To make the crust:ย Place almonds and 1/2 tsp of sea salt in a food processor and blend until completely mixed. Spread evenly into a 9 inch springform pan and place to the side.
- To make the filling:ย In a blender, combine cashews, coconut cream, maple syrup, and lemon juice. Blend until completely smooth and then transfer 1/4 cups of it into a bowl and set aside. Add the pumpkin, vanilla extract, ginger, cinnamon, nutmeg and sea salt into the blender until smooth. Pour on top of the crust and spread evenly.
- Drizzle the 1/4 cup of cashew cream over the top and drag a toothpick through the mixture to make a cool design. Gives it a marbleized look. Place cheese cake into the freezer for about 2 hours until completely hard. Transfer it to the fridge until ready to serve. Leftovers are good for about 3 to 4 days in the fridge.
