Peanut, Sweet Potato and Carrot Soup

Ingredients 

  • 2 tablespoons of coconut oil
  • 1 cup of onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon of turmeric powder
  • 3 medium sized sweet potatoes, chopped
  • 3 medium carrots, chopped
  • 4 cups of vegetable stock
  • 1 table spoon of natural peanut butter ( I used Kirkland Natural Peanut Butter – no sugar or salt added)

Steps To Making It

  1. In a dutch oven pot, melt the coconut oil on a medium heat. When the oil is melted, add the onion. Cook the onion until softened. Add the minced garlic and turmeric. Mix everything together and cook until you can begin to smell the garlic.
  2. Add chopped sweet potatoes and carrots. Stir ingredients together until everything is coated. Add the vegetable stock. Bring to a boil, then reduce heat down to a simmer. Cover and simmer for 20 minutes or until potatoes and carrots are tender enough to stick a fork in them with no issues. Stir in natural peanut butter until evenly melted.
  3. Remove the pot from heat. Use an electric mixer or blender to blend everything together. If using a blender, make sure to let the soup cool down before transferring it. Once it is all mixed together, season with salt, pepper, organic coconut milk, fresh basil, cilantro and red pepper chili flakes.

Sweet Potato

Cilantro

  •  When someone dislikes the taste of cilantro, because they get a harsh flavor from the herb, it means that the individual has a higher oxidative rate of heavy metals in the body. These heavy metals could be a combination of aluminum, copper, nickel, etc. Cilantro aids in detoxifying the brain and helps in extracting heavy metals and toxins from the body

Garlic

  • Coconut when it comes in contact with other food stimulates the food to reach its full potential. Any food that has healing properties, becomes more nutritious and powerful
  • Is a medium-chain fatty acid that breaks loose other fats and helps in pushing them out of the body

Carrots

  • Contain beta carotene which is needed to make vitamin A
  • Is a powerful antioxidant
  • Individuals who are chronic worriers would benefit, because carrots contain potassium which helps lessen the tension in arteries and vessels
  • Contains vitamin K which regulates normal blood clotting, plays a role in building healthy bones. Deficiency of vitamin K is not common, because the bacteria in your gut will produce it

Peanut 

  • Contain riboflavin (vitamin B2)  and niacin (vitamin B3) which are essential for proper cellular respiration. Without these two vitamins, the body would not be able to produce sufficient amounts ATP (energy)
  • Contains pantothenic acid (vitamin B5), which is important for fighting stress. Stress is the main reason B5 is depleted from the body, which makes sense why the adrenal glands need it in large amounts. The adrenal glands secrete the stress hormone, cortisol, when experiencing a stressful state
